The pad width will not affect the position of the sprocket in relation to the roller. The dish in that particular Berco sprocket may not actually fit your JD1010. Used stuff is the correct stuff. It sounds like you may intend to take your crawler to shows or at least show it off to your friends. People admire the time, money, and effort it takes to find or restore an original old crawler to near perfection.

As Jim Anderson mentioned, I believe the inability to tilt the forks will be your biggest irritation. Even if you get them loaded, going down the slightest hill on the way to the house will cause the pallets to want to slide off.
